Hello,

I don't understand
"We knew the sales would be all upside."
all upside??
Who can explain to me please?

All upside has many uses. In this specific case, it means 'all profits.'

You see the aforementioned use of 'all upside' mostly in marketing and sales scenarios.

When you don't understand an expression, you may look up the word in a dictionary online :

You'll see here that 'upside' means an 'advantage', therefore, a 'profit', whereas the contrary is 'a downside' = an inconvenience.
